Kai Pad King (Stir Fried Ginger with Chicken) is a simple yet flavorful dish with Chinese origins. The spicy flavor of ginger enhances the chicken, making it a quick and easy option for a delicious meal. This dish is perfect for a fast lunch, served over rice.

 

Ingredients:

  • 150 g chicken, cut into small pieces
  • 50 g shredded ginger
  • 80 g sliced shallots or onion
  • 50 g mushrooms, sliced
  • 15 g long onion, cut into pieces
  • 5 g garlic cloves, minced
  • Carrot, cut into strips (and baby corn or any other vegetables)
  • A few chilies or red pepper (to taste)
  • Oil for stir-frying
  • Soy sauce (for seasoning)
  • Oyster sauce
  • Sugar (to taste)
  • Black pepper (to taste)
  • Dark soy sauce

Instructions:

  1. Prepare the Ingredients:
    • Clean and prepare all vegetables and chicken. Heat oil in a pan over medium heat. Add garlic and onions along with any hard vegetables like carrots and baby corn. Stir well until fragrant.
  2. Cook the Chicken:
    • Add the chicken pieces, shredded ginger, and mushrooms to the pan. Mix well to combine.
  3. Add Seasonings:
    • Begin adding the sauces: first, soy sauce and dark soy sauce. Mix well. Then add sugar, oyster sauce, and a little bit of water. Keep stirring until the chicken is cooked through. Taste the mixture; add more seasoning if desired.
  4. Finish with Vegetables:
    • Once the chicken is cooked to your liking, add any remaining vegetables (such as long onions and chilies). Stir for a short time until everything is heated through, then turn off the heat.
