Thai Style Noodles in Gravy (Rad Na): ราดหน้า
Rad Na is a delicious dish that originated from China, where it was traditionally served in upscale restaurants. It gained popularity among the working class, particularly the Teochew people from the Chaoshan region, due to its quick preparation and filling nature. Over time, Rad Na made its way to Thailand, where it has become a beloved dish.
Ingredients for a Single Serving:
- 200 g of meat (pork, chicken, beef, or seafood)
- 100-200 g flat noodles
- 1 egg
- Vegetables (e.g., carrots, baby corn, kale, broccoli, cauliflower)
- Garlic (to taste)
- Cornflour or potato starch (for thickening)
- Black or white pepper (to taste)
- Sugar (to taste)
- Light soy sauce (to taste)
- Oyster sauce (to taste)
- Dark soy sauce (to taste)
- Salty soy bean (to taste)
- Water (as needed)
- Vegetable or cooking oil
Instructions:
- Prepare the Meat:
- Chop the meat into bite-sized pieces. Make a marinade by combining the egg with oyster sauce, light soy sauce, salt, and pepper. Mix well with the meat and refrigerate for at least 30 minutes. (If using seafood or tofu, marination is not necessary.)
- Prepare the Noodles:
- In a bowl, mix the flat noodles with 1 tsp of dark soy sauce and 1 tsp of light soy sauce. Be careful not to use too much dark soy sauce; the noodles should be light brown after mixing.
- Cook the Noodles:
- Heat oil in a pan until hot. Add the noodles and cook them quickly, stirring to ensure they are evenly cooked. Optionally, you can add an egg to the noodles during cooking for added flavor. Once cooked, transfer the noodles to a serving bowl.
- Prepare the Vegetables:
- Clean and chop your vegetables into bite-sized pieces.
- Cook the Garlic:
- Crush and chop the garlic. Heat more cooking oil in a pan and add the garlic. Cook until fragrant.
- Cook the Meat or Seafood:
- Add the marinated meat (or unmarinated seafood or tofu) to the pan with garlic. Continue cooking until fully cooked.
- Add Water and Vegetables:
- Pour in 1 cup of water and bring it to a boil. Add the chopped vegetables and cook until they are tender.
- Season the Mixture:
- Add oyster sauce, light soy sauce, salty soy beans, sugar, and pepper to the mixture. Stir well and taste for seasoning.
- Thicken the Sauce:
- In a separate bowl, mix cornflour or potato starch with a little water. Slowly add this mixture to the pan while stirring until the sauce thickens. Remove from heat once thickened.
- Combine with Noodles:
- Pour the thickened gravy over the prepared noodles in the serving bowl.
- Serve:
- Optionally, add dried chili, a squeeze of lime juice, or chilies in vinegar to taste before serving.
