Ingredients:

  • 1 egg
  • Big flat rice noodles

  • 1 tbsp cooking oil
  • 2 tsp sugar
  • 1 tsp dark soy sauce
  • 1 tbsp soy sauce

Method:

  1. Prepare the Noodles: In a bowl, toss the big flat noodles with the dark soy sauce until they are well coated. Set aside.
  2. Heat the Oil: In a frying pan or wok, heat the cooking oil over medium-high heat. Add the crushed garlic and stir-fry until fragrant.
  3. Cook the Protein: Add your choice of meat or tofu to the pan and stir-fry until cooked through.
  4. Add Hard Vegetables: Incorporate any hard vegetables (such as carrots and baby corn) and cook until they are tender. If you are not using hard vegetables, you can add the egg at this point. Stir well to combine.
  5. Mix in the Noodles: Add the prepped big flat noodles to the pan. Season with sugar, soy sauce, and oyster sauce. Stir-fry everything together until well combined.
  6. Add Kale: Toss in the kale and mix all the ingredients together until cooked through. Once everything is heated and well combined, sprinkle with black pepper to taste.
