Mango Sticky Rice (Khao Niao Mamuang) : ข้าวเหนียวมะม่วง
Mango Sticky Rice (Khao Niao Mamuang) is a beloved Thai dessert that showcases the rich flavors of Thailand. This dish is often enjoyed during the summer months when mangoes are at their peak ripeness. Mango Sticky Rice combines glutinous rice with fresh mango slices and a sweet coconut sauce, creating a delightful harmony of flavors that is both sweet and savory.
Ingredients:
- 2 cups sticky rice (also called glutinous rice)
- 2 cups coconut milk
- 1 cup sugar (palm sugar preferred)
- ½ teaspoon salt
- 3 ripe mangoes, cut into thick slices
- 1 tablespoon toasted sesame seeds (for garnish)
- 1 tablespoon tapioca starch (or corn flour)
- 1 tablespoon sugar (for the topping)
- ¼ teaspoon salt (for the topping)
- ½ cup cooked mung beans (optional garnish)
Method:
- Prepare the Sticky Rice:
- Wash the sticky rice thoroughly and soak it overnight (or for at least 3 hours). Drain the rice. If you want to make colored sticky rice, add food coloring to the soaking water overnight.
- Steam the Sticky Rice:
- Line a steaming pot or bamboo steamer with a thin white cloth. Place the soaked sticky rice in the cloth, then steam until cooked, about 25 minutes.
- Make the Coconut Sauce:
- In a medium pot over medium heat, combine the remaining coconut milk, some water (about ½ cup), sugar, and salt. Bring to a boil while stirring until the sugar dissolves. Continue cooking until the mixture bubbles vigorously and slightly thickens.
- Combine Sticky Rice and Coconut Milk:
- Transfer the steamed sticky rice to a medium-sized bowl. Pour in the coconut milk mixture from step three and stir until well combined. Let it sit for at least 15-30 minutes to allow the flavors to meld.
- Prepare Topping Sauce:
- In a small pot, combine ¾ cup of coconut milk with tapioca starch (or corn flour) and ¼ teaspoon of salt. Heat gently while stirring continuously until the mixture thickens and begins to bubble.
- Serve:
- Scoop a portion of sticky rice onto a plate, drizzle with the thickened coconut milk topping, and serve alongside ripe mango slices. Optionally, sprinkle with toasted sesame seeds or cooked mung beans for garnish.
